5 min creamy potato wrap… thing (Okay, the name still needs work)

This one was completely by accident. Really! I was actually surprised that it tasted so good! Especially as I was the one making it! I had come back from university at 4.00 pm, completely ravenous after skipping lunch. I had no patience to make food. Without really thinking about it, I picked up a potato waffle, found some other random ingredients and starting tossing it together into a bowl in the  microwave and it came together! I got an idea as to what I was making after I was more than halfway through it! It takes like 5 minutes to make. And its delicious for something that took so little time.

Things you need –

One potato waffle
Tomato puree
Half a chopped onion
Chili powder
Chopped or powdered coriander
Yogurt- A couple of spoons (Optional)
Garlic powder
And a microwavee….

Take a microwavable bowl and place a potato waffle at the bottom. Put a couple of spoons of tomato puree on top. Keep it in the microwave at full power for 40 seconds. Add chili powder, garlic powder, chopped onions and microwave it for 2 minutes. Just keep checking if the waffle is done. It really depends on what kind of microwave and waffle you’re using. Sprinkle the coriander and give it a mix  (Yes, I really, really like coriander!).

Here comes the magic bit now. I added a couple of spoons of greek yogurt to the mix, and it tasted wonderful. Stuff your amazing…whatever it is…into a wrap (or two) and ….mmmmmm! Awesome!

The yogurt is up to you, but I thought that it took off the extra tangy..ness of the tomato puree.

You can also use boiled potatoes instead of the waffle. I only the waffle as I needed to eat something quick!  And it tasted great. 😀
